Ingredients
1 cup onion, chopped
1 tablespoon peanut oil
2 (10-ounce) packages chopped frozen spinach, thawed
2 tomatoes, thinly sliced
1 green pepper, seeded and chopped
1 teaspoon salt
1/8 teaspoon black pepper
1/2 cup natural peanut butter

Instructions
1. Sauté onions in oil until tender; add tomatoes and green pepper and cook for 1 minute.
2. Add spinach, salt, and pepper; cover and simmer for 5 minutes.
3. Add peanut butter to spinach mixture; combine well and cook for 10 minutes over low heat.
4. Stir occasionally to prevent sticking. Serve hot.
